Mixed Vegetable Casserole  
Ingredients
  • 2 – 10 oz. pkg. frozen mixed vegetables (or 16 oz. bag)
  • 1 C. chopped celery
  • ½ C chopped onion
  • 1 ½ C shredded sharp cheddar cheese
  • 2 C Hellmann’s mayonnaise
  • Ritz crackers (about 1 “sleeve”)
 
Directions

Boil first three ingredients in salted water until vegetables are barely tender. Drain well. Stir in: 1 ½ C shredded sharp cheddar cheese 2 C Hellmann’s mayonnaise Top with finely crushed Ritz crackers (about 1 “sleeve”) Bake at 350 degrees for 15 to 20 minutes.
